I now use Diax with every bake, I like the taste, colour and crust on my bread that it helps produce

This review is about the packaging and not about the item itself as I have not had the opportunity yet to try it. Unfortunately it arrived damaged with the contents having spilt out through a tear in the the packet.This was replaced, without charge, immediately. However I would advise more robust packaging in the future.

I have only just started using it and have made two loaves so far. I am using 3gm per 500gm of flour and have noticed a slightly more lively ferment with the overnight sponge that I use. I can't say I have noticed an appreciable difference to either taste or crust but that may happen when I try using s slightly higher proportion of Diax to flour.
