Diastatic Barley Malted Flour is a component of bread doughs I had wished to try and test in bread dough for a very long time. Living in Indonesia, where only forms of amilases chemically derived from molds cultures are available, I really have to thank the excellent mailing system of Bakery Bits if I am finally able to start experimenting with this tool. Experimenting is always a wonderful state.

I wanted this to bake my first sourdough loaf, and it arrived very quickly which was great. The loaf was fine for a first attempt and I was delighted.
