My first order from BakeryBits arrived very quickly, and the packaging was excellent. I wanted to try out diastatic malt. So far I have used it only once, so need more experience. The recommended proportion is 1%, which I used, then realised that there was malt in one of the flours too. I would advise other new users to be careful, it really does make the loaf moister. One of my samplers used the word stodgy (the cheek)! I plan to try other malts in future, more for the flavour than for moisture retention.
