The recommended proportion is 1%, which I used, then realised that there was malt in one of the flours too. I would advise other new users to be careful, it really does make the loaf moister. One of my samplers used the word stodgy (the cheek)! I plan to try other malts in future, more for the flavour than for moisture retention.”
