Difficult to find in most shops, malt flakes lend a delicious bite and lovely flavour to my loaves. I'd recommend using around 50g per 500g flour, and using alongside a good pinch of malted bread flour (such as RBM).

Lovely in my Diana Henry inspired muesli. I haven't tried making bread with them yet, speedy delivery and fantastic that you can buy in several sizes.

The malted wheat flakes are perfect for my purposes, and I was delighted to find that BakeryBits are happy to complete the paperwork necessary to send me a pack through customs to my home here in Sydney, Australia! The package was a bit mangled after its long journey, and had been X-rayed en route (no doubt because of the delicious smell emanating from the box!) but arrived safely in one piece. I am now waiting for my next BakeryBits order containing both diastatic malt flour and red malt flour to tweak my new-style Granary sourdough loaves and make them even better next time!
