“I got Emmanuel Hadjiandreou's How to Make Bread, and an often-cited ingredient was malthouse flour, or a mixture of rye and malted wheat flakes as a substitute. I've only managed to find malted wheat flakes on KAF in the US, and I didn't need a 2 lb bag, so I bought a 500g bag from Bakery Bits. It's added so much flavor to my loaves! If only Bakery Bits had a location in the US so I could save on shipping...”
