The sour and barrel-aged beers in bottles are a whole other level, many of which still make me go 'what was that?' and then want more. Wild Beer's treatments of Imperial Stout always come out with a gorgeous result, often closer to a wine than a beer (no surprise when wine barrels are involved) and they really stretch the envelope on sour beers. My favourite at the moment is Damasco; a saison-style drink, exposed to apricots and deliciously dry.”
