“Fantastic product, just the right amount of fat to meat ratio
I coated the meat with Chinese flavours (careful not to get any on the skin) and left to marinade in the fridge (uncovered, to help the skin dry out) overnight
Slow roasted to help render the fat, then turned up the heat to get extra crispy crackling”
“Marinated these for three days then braised them covered for two hours then uncovered for a further two hours with sticky glaze sauce (all at gas mark 5) and then ate some really tasty ribs”
