Judging by the flavour I would guess that this was a little older than the advertised 28 days - I would guess at more like 36 days as it is just starting to get a hint of the truffles and diesel funk (which I'm not keen on), but it was no more than a hint and did nothing to detract from a fine piece of beef.”
