“As usual, this was sublime. I used this to cook one Beef Wellington as per Gordon Ramsay's recipe (rather than 2 as instructed), using the thin end of the tail as an offcut to make the accompanying sauce. The steak was cooked to perfection, as can always be expected with Swaledale products.
These fillet tails offer incredible value for money - you can usually get two large fillet steaks from them, plus a bit left over. I cannot imagine buying fillet steaks from anyone else - if you are in doubt, give them a go, you won't be disappointed.”
