“My first purchase from Swaledale and the steaks were fantastic. Lovely thick cut, and good yellow fat. Reverse seared on the kamado. Gently smoked for 30 minutes to 51C internal temp, then wrapped up to keep warm as the kamado was brought up to searing temp for a minute each side. Perfect medium rare, so tender.”
