“Halved it. Placed in SousVide bag with Hoisin sauce and Chinese 5 Spice. Cooked at 90C for 5 hours. Drained juices. Resealed and kept in fridge overnight - enhances flavour. Into oven - fan 200C until crisp. Shred serve with rice etc etc. Sauce from juices. Amazing. Will finish cook the second half which is all cooked and waiting in the freezer for later this week.
