It is a great alternative to white flour. It lightens the heavier flours, like Cotswold Crunch, while not impairing their flavours, but adding the subtle nutty notes it has. Makes heavy flours easier to mix by hand for a much better finish than a machine ever gives. Reduces that stickiness that is sometimes noticed in strong flours.
