Our Galician beef fillet comes from retired dairy cows between 8 and 12 years old, sourced from the Northwest of Spain. This type of ageing allows for natural grass-fed marbling of the beef, comparable to that of genetically optimised grain-fed US, Japanese and generic Wagyu beef. The older cows have a higher percentage fat content and more marbling, giving the fillet a distinct and unique flavour. All our galician fillets are dry-aged for a minimum of 7 days. Also known as Filet Mignon, Tenderloin, and the Eye Fillet, this is a lean, mean, and amazingly tender cut, prized for its quality. It can be enjoyed by either cooking it as steaks or roasting.

A great product which was both very tender and flavoursome. We barbecued it with a chimichurri basting, let it test for a while and enjoyed it with a glass of fine wine. We will be buying this again as it’s also great to share as a signature dish with friends .

OMG!!!! This is the BEST fillet steak ever!!! We eat fillet at some pretty good restaurants and this surpasses even them.The depth of flavour is outstanding.

The fillet carries a good marbling through the meat as advertised and the larger size makes it perfect for cutting a perfect fillet steak. The little additional marbling and flavour also allows for the steak to be cut very thinly to produce a melt in the mouth effect where traditional fillets just do not carry the same depth of flavour and where you would need another cut. Love it!

The marbling on this is up there with wagyu at a fraction of the cost, and the taste from it being dry aged older beef is fantastic. Will absolutely be purchasing again - it's a little more than the Wexford fillets I usually buy but the quality difference is huge.

Cut up into streaks. Just really good steak. I was expecting something a little different for the age of the meat. Not sure why but delicious anyway and would recommend grilled medium-rare for a treat.

A succulent cut worthy of its origins. I reverse seared mine and it was delicious. If you prefer your meat a little more cooked just sear a little longer or flash fry to finish.
