Iberico Baby Back pork ribs are cut straight from the Iberico pork loin. They are very succulent and tasty while maintaining our excellent quality. They are smaller in size than ribs of a standard white pig, however the flavour of Iberico ribs is far superior. Indigenous black Iberico pigs wander the Dehesa forests of southwest Spain munching on herbs, grass and most importantly, acorns. Not only are they the happiest pigs on earth, but this diet adds wonderful flavour to these Baby Back pork ribs and all that exercise fosters the marbling that makes Iberico pork ribs so special. The acorn and herb flavoured pork is high in mono-unsaturated fats that melt at low temperatures, and is more healthy than the fat from normal pork. Iberico Baby Back pork ribs have much more fat content than standard white pork ribs but their flavour is much more complex because of the grass, herbs and acorns on which the animals grazed on. Iberico Baby Back ribs are easy to cook and are perfect for a special occasion or a casual dinner with family and friends.

The best ribs we have ever had (including the ones served in Borda Beri in San Sebastián) slightly fatty but with an amazing flavour. We cooked them in the oven as suggested (3hrs at 130oC) as per the Basco website recipe and finished them over coals on the BBQ. An amazing lockdown treat
