Iberico Baby Back Ribs, 1.3Kg These succulent Iberico Baby Back pork ribs are cut from the Iberico pork loin. They are smaller than standard ribs but offer a far superior flavor due to the diet of acorns and herbs consumed by indigenous black Iberico pigs as they graze in the Dehesa forests of southwest Spain. The animals' exercise also fosters the marbling that makes Iberico pork ribs so special. The acorn and herb-flavored pork is high in mono-unsaturated fats that melt at low temperatures, making it not only delicious but also more healthy than the fat from normal pork. Iberico Baby Back pork ribs have a higher fat content than standard ribs, but their complex flavor is worth it.

“Really good ribs, more marbling and depth of flavour than normal pork. Smoked for 90 mins with hickory, wrapped for 45 mins then glazed with bbq sauce for another 10 mins, falling off the bones but still had a bit of bite”
