Our salt cod trimmings are from Icelandic origin and carefully prepared by Bacalaos Ederpesca in Gipuzkoa, a family-owned salt cod specialist. This renowned company supplies some of the best restaurants in Spain. To maintain quality, keep refrigerated and use within 3 months of opening. The product has a 1-year shelf life from the date of manufacture.

“These are excellent value for the specific purpose - the first 250 gms went to a tortilla de bacalao, and the remaining 250gm will help stuff the pimientos de piquillo this weekend. The cod, being trimmings is not too dry and therefore you can probably get away with soaking overnight and being able to cook for lunchtime the next day, so that there is still a bit of bite to the taste. 24hrs might not be necessary. A lovely taste of Navarra.”

“Good value. No bones or skin. More refined than the salt fish I've been buying. Needs less soaking time than I gave it but it made lovely light fritters. I'll be back for more.”
