I fried a couple of these in olive oil, added a little white wine and then some chicken stock. Into that I threw a handful of baby sweet silverskin pickled onions and cooked the whole lot down for a while until the sauce had thickened a little. A couple of minutes before dishing up, I added some petit pois and then parsley to serve. Our guess lapped it up. The spice and fat coming out of the sausages made the sauce heavenly. My only beef? There were no leftovers for us for the next day and the guests were so intent on the chistorra that they neglected my chicken wings with sobrasada!

We fried this with garlic, shallot and a splash of red for our tapas night and loved every bight! Will definitely be buying more
