“I use three Italian bought pasta machines one of which uses brass dies. I find using Sofrito 00 flour gives me perfect results for extruded pasta whereas supermarket "00" has variable results in terms of egg to flour ratio and cooking times.
I use it for ciabatta and focaccia and combined with a good quality olive oil and cooked in a wood stove gives excellent results.”
