I have been making organic sourdough pizza every weekend during lockdown, experimenting with a mix of of this 00 and a small amount of Mulino Marino Organic Durum Semolina Flour. I am so pleased with the results, the pizza bases have been delicious. Stretching the dough into a good thin circle takes practice, but the dough has been amazing. I also recently tried my first ever sourdough croissants using this 00 mixed with Stoates organic strong white, and the results were impressive.

Made such a lovely tasty bread that I bought a bigger bag of this excellent flour. Another bonus is that it’s not ‘fortified’ with additives, like most British flours are.

This Italian "00" flour is recommended by Bakery Bits to feed their White sourdough starter. They are correct - the starter loves it! Combined with their white starter, I now have a very active and healthy white starter.
