“My third purchase of this excellent flavoursome maize meal.
When I make polenta I make extra and spread it in a tray to cool and dry out a bit.
I then use thiswith frying like hash browns next to the eggs, brushing with oil and baking as “chips” or grating into soups to simmer and thicken.
For pancakes we use 1/2 plain white flour, 1/3 Indian Head white corn meal and 1/6 fine maize meal + a bit more milk/buttermilk.
