“I use this fab product in American cinnamon Buns, it is enriched all in dough with a lovely hint of lemon in the background. A good quality flavour is essential. The fondant glaze topping also has a lemony flavour. I’ve tried it with vanilla it’s ok but the lemon is wonderful, really contrasts so well with the cinnamon orgy a good cinnamon bun offers. Quick recommendation for a recipe is Peter Reinharts in The Bakers Apprentice book fabulous result, fabulous book for bakers.”

Even better than I thought. I bake lots of lemon things and always ended up with bald lemons. This replaces the need for any zesting, etc . It’s quite powerful eg . One or two drops turn white icing into lemon flavoured white icing enough for 50 buns .”
