I believe this flour is the equivalent of "first clear flour" found in the US, and in American recipes. I use it to make a NY-style rye sourdough, and it turns out beautifully.

Love this flour using it to make my sourdough and have been very pleased with the results , it makes a blonde rather then white bread which smells and tastes great. Bought the 5kg bag and will be doing the same next time great flour

I make basic sourdough loaves following the Tartine method. I like the taste of this flour, it is not over refined, I find that the loaf retains it’s structure, it has a lighter texture than wholemeal flour. I have always found Bakery Bits to be efficient, helpful and friendly.
