“I bake a range of things at home, and usually use a quick yeast as I can generally predict its performance. During Covid lockdown, Saf Levure was the only yeast I was able to source, so it certainly bailed me out (the large tin was going to last me a long time!)
Once I'd got used to activating it at the right temperature, I was fairly happy with it, but did find it a bit unpredictable. It seemed to have good days and bad days. OK with French sticks and croissants, but didn't seem to have staying power with W/Meal flours.”
