“I originally purchased the 10x10cm open top Bread Pan, which was top notch, however, I really wanted bread that when sliced, would fit a standard toaster and 10x10cm, was a little small. So I went for it and bought the 15x15. Not only does my bread now fit he toaster perfectly, but for whatever reason, the bread keeps better.. I was never much of a baker and only started making my own bread about 2 years ago.. In fact my first recipe, came from the back of a bag of flour.. Simple white bread, but far tastier than that which came from the supermarket. A while ago, I decided the bread loaves, were just not big enough, so I simply doubled the recipe, I just doubled everything.
My usual workflow, is to mix the ingredients, most of the kneading done with my Kitchen Aid, plus a couple of minutes by hand. Then I place it in a large stainless steel bowl, coated in a very light coating of olive oil.. Once approx doubled in size, I flour the worktop, empty the dough onto the worktop, then carefully form it into the rough shape, instead of punching out some of the air, which I usually did, then drop it into the bread pan, give it a light egg wash coating (egg yolk and a teaspoon of milk, it then goes into the oven at 180C, for 36 minutes. I then store it in a cotton bag. NO PLASTIC lining.. However, normally the cut surface tended to dry out and the crust would becomce very hard, after say 3 days. Now I can bake a loaf, in this larger tin and for some reason, it doesn't dry out and the crust stay softer, longer. I can now keep the brad for almost a week, well probably longer, but it's usually gone in 4 days max .
This Pullman bread pan, as they say, is a commercial product, so might look a tad worn or scuffed, when it arrives.. but then it's not meant for the home baker, who is making a single loaf, every so often, it is meant for bakers, producing many loaves a day.. As for cleaning, It's not necessary to wash after each use, in fact you get better results, by not washing it at al, unless it get very dirty, the bread should never stick to it and if you give it a light coating of vegetable oil, before storing it, until you need it again, it should last you many many years”

“Wonderful product but very large. Should have measured and compared with my existing bread tins. Am currently making giant loaves and freezing half. Will be buying a smaller tin soon. Very good strength and with a little oil excellent none-stick quality. Did make a mistake in size though and the tin just fits inside my oven.”
