“At about 12.5% protein this flour won't take as much water as my usual recipes, but it makes my sourdough starter go crazy! It won't stay in its lock-tite box and is all over the fridge. With an 18-24 hour fermentation the loaves are very tasty - I'm mixing it with Marriages VS Wholemeal (13.8% protein) for strength.”
