“My favourite flour for making 'white' loaves. It's not just unbleached, it has much of the wheatgerm in it, just not the bran. So it has plenty of flavour, yet rises well and has enough gluten not to need the addition of a stronger white flour. I tend to make a cheddar and nigela loaf with it (I add 90g of grated strong cheddar, and 5g nigela seeds to the flour right at the start), and also a 'hot cross bun' loaf (I add 65g currants, 35g mixed peel and 6g mixed spice) both sourdough, and both utterly delicious.”
“This flour tastes fantastic. Just baked bread with it today using the organic fresh yeast from Bakery Bites. I also made quick chapattis. The bread is very filling, especially if paired with nice butter. My husband tasted both and he loves it. This flour kneads easy by hand and when it proves the colour is almost like a wholemeal flour. Don't let that scare you, it's because the flour is unbleached. Very happy with the taste and quality of this flour.”
