“This flour is great for baking standard breads, I find it can be tougher to get the right moisture content as it does absorb water differently to anything else I've ever used, very much have to do it by feel but when you get it right it rises lovely.
Works great for flavored loaf's as it takes on any flavors you add, works great if you reduce your water content in the recipe and add about a dozen cherry tomatoes halved and add about 10 minutes on your baking time.”

“Great four, good protein content and allowed for strong gluten development. Resulting flavour was strong and malty. Made for excellent sourdough with lovely open texture crumb and beautiful ears. Would defo buy again.”
