“A superb find. This flour is unfortified so has no added iron. Any white wheat flour milled in the UK is fortified with iron, calcium carbonate, vitamin B1 and nicotinic acid. This is fine unless one suffers with haemochromatosis, a genetic condition whereby the individual suffers from iron overload requiring as much as 2 units of blood to be removed every year. With this flour you can bake great bread and not worry about additional iron from fortification. Together with avoiding red meat, this flour means my wife is able to manage her condition without needing any blood removal. The T65 is a strong white flour useful for all types of bread making, it has a great flavour. Thank you Bakery Bits for a fantastic service.”

The information available suggests that the grain species used has a different gluten structure etc that helps if you have digestive intolerances.
