“I recently bought a 15kg bag of this and despite trying a number of ways to make a viable dough (with sourdough starter, with dried yeast, hand mixed, bread maker) the flour does not produce a dough that has any structure. No gluten is developed, the dough rips and it looks how I would imagine plain flour would react. Have contacted Bakery Bits and sent photos, just waiting for a reply....”
