“I have been baking for some 40+ years in both a home and professional capacity and have come to expect three things from my tools:
1) Quality
2) Effectiveness
3) Simplicity
The Boulange Professional Lame or Grignette fulfils all three criteria admirably.
1) The quality is excellent. The Grignette is made of strong but flexible plastic which I find much more useful than wood as it is very light and comfortable to use and also easier to keep clean. The lame is fitted using a simple 'Push-Click-Pull' system which allows for the lame to be rotated in the Grignette as and when it needs.
2) I chose the Boulange Grignette as it can be used Left-Handed or Right-Handed which allows me to achieve complicated slashes by simply swapping hands and directions. The lame is a high quality razor blade with marked corners so you can rotate it as needed to keep the blade fresh. It is extremely comfortable and easy to use and therefore very very effective. I estimate each corner should do about 30-50 baguettes or 25-40 denser dough loaves before needing to be rotated.
3) As I said before, the design is simple, comfortable, and easy to use and clean. There are no awkward bits to hide bacteria. it can be put in the dishwasher (without the blade). Delighful.
So all in all the Boulange Grignette is really a cut above the rest and no apologies for my Lame joke.

“My efforts in slashing the dough with a standard kitchen knife have so far been less than successful. I was pleased to find this lame as the blade is replaceable and the handle is suitable for both left and right handed people. It is light to hold and yet sturdy with a good cover for the blade.”
