I don’t know what’s going wrong for me. There are so many 5* reviews for this product but for me it’s an utter disaster. I’ve tried making 6-7 loaves now with it and every time the dough sticks, refusing to come out until I shake it like mad. I’ve had dough come out over the side of my La Cloche, even upside down but never in the centre where I want it. I’m using a recipe called a basic sourdough boule recipe from www.sourdough.co.uk, I’ve always liberally dusted both the banneton and dough with rye flour. This last time I even lightly sprayed the banneton with water, as suggested in an answer to a question I asked on this site. The result was the worst yet with the dough absolutely refusing to come out. When I did eventually manage to get it out it had lost all its shape. I know it will still taste amazing but I’m on the verge of giving up with this. I’ll give it one more try but if that doesn’t work I’m going back to my 99p plastic collander which has never failed me.

I usually make around 2kg of dough (1kg flour, 70-80% hydration, 20% starter), then split it into two loaves of around 1kg. So I thought this would be the right size. However, in my experience this banneton is far too large for a loaf of this size, so my loaves are a bit flatter in shape than I'd like. But the quality of the product itself is great: it seems sturdy, my bread always comes out easily either with the liner or without and plenty of rice flour, which leaves a nice pattern on the bread. So recommended for BIG loaves, although I wish I'd gotten the 500g version for a more suitable shape. If "1kg" means "1kg of flour" (which I'd find rather mad) then this should be clarified.

I run a small bakery and up to now have always ordered the normal (non-wooden base) 1kg bannetons, but those were out of stock so,I went for these and am happy. The dough comes out very easily right from the start and the plain loaf-top makes a change. Thanks to bakerybits for keeping up with the manic orders!!!
