“I use mine to prove 800-950grms of dough although it is listed for 500grms. It's beautifully made and should last a lifetime. The dimensions are such that the proved loaf has a decent height prior to baking. The baked loaf is, as a consequence, quite rounded which I prefer. Because the linen lining wicks away some of the surface moisture in the dough whilst proving, the dough develops a skin which means the proved loaf holds its shape when tipped out on to the peel prior to baking.”
