I bought 2 then another one. It is a must if you want to let your dough breath perfectly without the expensive bread humidity control machine. Highly recommend.

The old saying of using the right tool for the job applies equally here. Ordinary tea towels are next to useless. The couche is made from good quality linen which has the right amount of stiffness and resistance to keep the baguette in shape whilst proving. It's a decent size too meaning you can use it for a 'batch bake'. Coupled with the baguette baking tray, I can now enjoy proper slow fermented baguettes - infinitely superior to the tasteless offerings supermarkets provide.
