Turkey tasted amazing! Easily fed 10 people and leftovers. Brilliant cooking instructions and timings were spot on! Will be back again next year

I was never the biggest fan of turkey at Christmas, old memories of dry, fairly tasteless poultry that needed plenty of gravy/sauce to make it edible. In recent years I have generally preferred to do goose or beef wellie, but I was badgered into having a turkey this year. The plan was to do it in the Kamado Joe on the rotisserie, herb infused butter injected and dry brined overnight. The weather put paid to the BBQ idea so it went into the oven. The 5 - 6kg turkey weighed in at just over the 6kg mark. Cooked in about half the time all the recipe books stated, perhaps it was the butter injection, but fortunately, I believed in what the Thermapen was telling me. It was superb, moist, and flavoursome, (and about twice as much as we needed....). I always feel slightly guilty when I don't use my local butcher (who is excellent), but I have always been very impressed by the quality from Swaledale. Highly recommended.

The centre of our Christmas dinner was the star. Succulent and with a true turkey taste which was enjoyed by all.
