“We cut it into smaller joints, there's only two of us, and had the smallest joint on Sunday. Very tasty! I took the skin off the meat halfway through cooking as I didn't want the loin overcooked. I put the skin, it had started to crackle within 15 minutes of cooking, in with the roast potatoes to finish off. Unbelievable! The crackling is the best that I can remember. Even my wife ate some, she’s not been able to eat crackling for years as it generally comes out crunchy but chewy, but this was crispy but melt in the mouth delicious. I've now got two of my brothers looking to order from Swaledale.”
