Native, heritage breeds slow grown on small farms in The Dales, expertly butchered and delivered fresh. Nose-to-tail, nutrient dense and immense flavour.
“I ordered a smoking brisket with the intention of smoking it (imagine that). It comes a bit more trimmed than I would have liked with quite a bit of the point fat removed. The mohawk, deckle and the fat side of the flat were mostly exposed. This is not a BAD thing, necessarily, but if you're looking to do a traditional Texas or North American smoke, you might want a bit more fat left on the point so you can trim it the way you want it.
That all being said, the brisket came out great. The quality of the meat was excellent - quite lean, but not so lean that you have no intramuscular fat. This is more due to the fact that it is grass fed and not grain finished as you will find on North American beef.
I would buy again. I may call ahead and see if I can get a bit more fat left on the cut.”
