We have spiced beef every year and this is our 1st Swaledale silverside, quality is excellent and after 11 days of marinating in my wife's special mix - 2 days rubbed in brown sugar and left, 9 days with a rub of spiced salt ( saltpetre, juniper berries etc) we have no doubt it will be out best spiced Xmas beef yet”
