Amazing beef - both in terms of flavour and the way it cooked. We followed the cooking instructions to the letter and it was perfectly cooked. Seared but pink in the middle and juicy. Meltingly tender. Made a delicious béarnaise sauce to accompany, but just new potatoes and green beans on the side. Two was plenty for 6 adults and one child. Fantastic quality meat and we’d highly recommend Swaledale as everything we’ve had has been superb - ordering and delivery process are top notch as well.”
