“The last batch of maatjes I bought were fairly tasteless. The reason is that they had been over-washed to remove the excess salt with which they have been pickled. Maatjes should be salty. If they are excessively washed, not only do they become bland but the essential flavours are washed away as well. The Fish Society should taste a sample before they stock up.”
