The last batch of maatjes I bought were fairly tasteless. The reason is that they had been over-washed to remove the excess salt with which they have been pickled. Maatjes should be salty. If they are excessively washed, not only do they become bland but the essential flavours are washed away as well. The Fish Society should taste a sample before they stock up.

A great starter or a light lunch, served with cold plain boiled potatoes, chopped onion and a little fresh dill. Best I ever had were in Antwerp market a cold Sunday before Christmas. Full from a huge hotel breakfast we could not walk past the Maathes herring stall. We ate quite a few, cut up and placed on fresh onion, straight from the paper. They served as an appetite walk up call for not that long after we had a splendid fish lunch. Brill it was (the fish Brill) !

We were happy with our Maatjes herring fillets, however we are used to the Maatjes from the Ostsee that you get in Germany. The fillets are bigger and usually preserved in oil. Any chance we would be able to get those?
