My son made a ragu on sourdough - Thomas Straker recipe - it was delicious and we will be buying more. The 500g was 4 generous portions.

I cooked it with butter and added a bit of flour to soften the fibrous nature of the venison - had to remove stringy bits. The flavour was great and I think it was only me who minded about the texture. It went into a shepherds pie so that masked it.

Lovely coarse-cut mince, with delicious flavour. I've used some for a ragu, and some to make burgers served with crumbled blue cheese on them.
