Very easy to cook and it is delicious with an apricot jam glaze with added ground ginger and mustard powder. The meat slices beautifully too. “Delicious depth of flavour. Guests gave it 10 out of 10. I stripped the rind and chopped into strips and put in a v hot oven until it bubbled and blistered into the most amazing crackling. Husband put the strips that didn't puff up into the microwave, which worked nearly as well too. Huge amount of meat, too.”
