“All our family love cockerel, much preferring it to turkey which can have such tasteless breast meat. Our Easter meal was delicious, full of flavour and moist. Being a larger bird, you can rest it for longer before the meal without it cooling down too much. I cooked it slowly and, once my meat thermometer showed that it was cooked through, I kept it warm in a very low oven for the last 40 minutes or so, giving me plenty of time to complete the side dishes and gravy.”
