“We roast a chicken for one dinner and then make a hearty soup for the next night. The stock we get from that soup is exceptional. And if cooled, it forms a really good gelatinous solid lump - indicating it's really high in protein. Basically, these taste the way chickens used to taste before we ruined food. Love them.”
