“I'm comparing this to actual French made Saucisson that I regularly buy from the Good shed in Canterbury and Borough Market in London, both import from small farms in France. The consistency is a bit moist but I do like mine as hard as rocks which give them a really good mature full body flavor. This Saucission is OK but lacks the expected depth of flavor from a Saucisson as it stands. That said I could just let it hang for a couple months and that should greatly improve the texture and taste...”
