“We followed the suggestion and cooked it hot and fast in the BBQ, rested then thinly sliced. Did it the rarer side of medium rare. Lovely tasty fat melted and rendered down, surprisingly tender, beautiful. Really really good, and a bargain. Gutted they’re sold out I’d have loaded the freezer”
