“I haven't actually cooked this yet but I was very pleased with the look of it. It was a good colour and had a lovely layer of fat which, when cooked slowly, will render down to provide an unctuous meal.”

“I would go for the smaller weight because the meat on top of the ribs was very lean and turned out tough after smoking. I was expecting another rib.”
