I use to go ferreting years ago ,missed the taste I cooked in slow cooker with vegetables ,must admit price of game has gone up in price ,use to able to get a brace of pheasants cheap

Absolutely brilliant. With the addition of two rabbit kidneys which were perfect! Very tasty and high quality.

Rosie, my greyhound, has had pancreatitis and needs rabbit which is now easily and safe to obtain without the worry of poisons deliberately place in wild populations.

I took a bit of a gamble on this as I've never roasted a rabbit before. (Cooked it almost every other way imaginable but always in some form of stew/casserole. - Grew up on a lot of wild rabbit and determining the age wasn't always easy so tended never to roast.) I wanted to do a roast for easter but my mother in law doesen't really eat any meat other than game so decided to risk roasting it. I added a fair bit of fat inside and then wrapped the whole thing in several rashers of streaky and roasted it for (what felt like) quite a short amount of time and it was an absolute success! Will certainly do again. (although a friend yesterday told me they'd recently had confit rabbit legs which were fantastic so that might be the next experiment!)
