This paste is as good as it gets and the end result is as authentic as it comes. Just make sure you follow the recipe on the Mae Jum site and, more importantly, add the extra ingredients that have been ommitted from the sauce sachet to allow you to adjust for personal taste. These include Palm Sugar, Kaffir Lime Leaves and a tiny amount of Fish Sauce.

As a lover of hot, spicy, curries I was eager to try your Jungle Curry paste and was not disappointed. However, there are ingredients which are missing from your paste and these must be purchased separately and added to any curry recipe to give it that "authentic taste and flavour". These are Fish Sauce, Palm Sugar and possibly Galangal. If the customer is looking for a quick fix and a curry paste that does everything then this is not the product for them. Without these, any curry will just be "volcanic lava" hot and not taste of anything. There are competitors out there who do supply their Jungle Curry Pastes with every ingredient already added and so I feel that if you want to improve your product then you should add them also at the manufacturing stage. I love Jungle Curry and first tasted it at a Thai Restaurant in Kosova when I was working there in 2002. I will always have sachets of your paste in stock but there is room for improvement, especially with your Jungle Curry Paste. Do your best.

Hello David, thank you so much for your feedback. We are always looking to improve, but equally, as a native Thai, I want to stay authentic to my roots, so I hope you don't mind me sharing with you why we do what we do. You are right to say that other pastes include sugar, fish sauce, and shrimp paste......Galangal is there in ours. But, there is a very good reason why I did not add this at manufacture, for me doing so would be a compromise rather than an improvement for the sake of convenience. Having lived in the UK for over 30 years, I have always made my paste by hand, but since I started Mae Jum, I just use my paste from the packet with comparable results. The curry pastes sold in most Thai markets do not add any palm sugar, fish sauce or shrimp paste, it is just a blend of herbs and spices. This is exactly what we do. Fish products are quite pungent and are usually added during the cooking process, so to add them to the fresh herbs and spices and then seal them into a pack for months seems counterintuitive to me when I want those herbs and spices to retain their fragrance when you use them. I truly believe that this yields a better product. There are different shrimp pastes and fish sauces with different people (usually Thai) having their preferences, but more importantly depending on whether you are cooking with fish, prawns, meats etc, and the type of vegetables you are using (sweet, sour, bitter), the use of these extra ingredients can vary. Although we add salt to our paste as a preservative, we add much less than others, so you still have the flexibility there too. To add these ingredients at manufacture without knowing what will be cooked with them also feel counterintuitive to me. Although I want to make my products accessible and easy to use for all, I also want them to be flexible. One thing that was not anticipated, but was a pleasant surprise, was the feedback I've received from vegans and vegetarians. They can add alternatives to fish sauce and shrimp paste to balance the dish and still enjoy Thai cuisine, something I was very excited to learn. Thank you again for your lovely review. We really loved this punchy paste and ordered 6 more packs, and I’m sure it won’t be long before I order some more. I use the paste in stir fries as well.
