I was skeptical at first about how bake-in-bag would result in crispy skin. Well, it did. Hot air blew up the plastic bag like a balloon and the result is amazing. I also like the mildly seasoned meat.

What you need to do is to put the whole packing into the oven. You dont have to look at the oven and be afraid of getting burnt. It is really crispy even it is baked in a bag. It is amazingly crispy and delicious. The most important is it keeps the oven clean as the meat is in the bag.

Delicious and so easy to make. You think it won't get crispy in the bag, but it does! Super yummy.

A wonderful cut of cochinillo. At first, I was sceptical about roasting in a bag - how would the skin get crispy? But amazingly, it crisps up perfectly. Although it is crispy, you might like to colour it a bit more by returning it to the oven for 10 minutes once the bag has been removed. The great benefit of roasting in the bag is that all the juices are retained in the meat so it is super soft and not at all dry. A great dinner dish for sharing.
